Corn salad

Here's a tasty and colorful corn salad recipe:

Ingredients:

  • 2 cups fresh corn kernels (or 1 can of corn, drained)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped (or parsley)
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1 avocado, diced, and/or 1 can of black beans, drained and rinsed

Instructions:

  1. Prepare the Ingredients:

    • If using fresh corn, boil or grill it for a few minutes until tender, then cut the kernels off the cob.
  2. Combine the Ingredients:

    • In a large bowl, mix together the corn, diced red and green bell peppers, red onion, cherry tomatoes, and cilantro.
  3. Make the Dressing:

    • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  4. Mix Everything Together:

    • Pour the dressing over the salad and toss gently to combine. If using avocado and black beans, add them at this stage and toss carefully.
  5. Serve:

    • Enjoy immediately or let it chill in the refrigerator for about 30 minutes to allow the flavors to meld.
